With the blessing of his friend Austrian-born Hong Kong-based culinary star Roland Schuller, Mr. Cheng spent six months training in Rome at a Michelin-starred restaurant.
Back in his home town two years later, Mr. Cheng teamed up with Mr. Shuller to open the Drawing Room. The restaurant picked up a Michelin star within its first year of business, and Mr. Cheng has since opened two new eateries specializing in Hainan chicken rice, both called Hainan Shao Ye.
When not at work in one of his three restaurants, Mr. Cheng makes regular “food pilgrimages,” scouring some of the city’s less-explored streets for good eats. Here are his top five must-try dishes for foodies in the know.
